Soaking dried beans cuts down cooking time considerably.
To Soak:
Per 1 cup dried beans, add 4 cups of water and 1 teaspoon salt to pressure cooker. Seal pressure cooker and place over high heat to boil.
**(Be sure to follow manufacturer’s directions.)
Once steam starts to escape, using a kitchen timer, pressure cook for 4 minutes.
After 4 minutes, slowly lower heat until very little steam is heard.
Manually release pressure, using valve, making sure not to have fingers or hand over steam.
Cooking Soaked Beans
After releasing steam, unlock pressure cooker, drain beans and return to pot, adding 4 cups fresh water or stock and any desired seasonings.
Seal pressure cooker and place over high heat to boil.
