Ingredients
Salad
- 1 lb Arugula
- 1/4 cup Ginger root Fresh, chopped
Summer salad
- 2 cups Strawberries Sliced
- 1/4 cup Cashews
- 1/4 cup Almonds
- 1/4 cup Coconut flakes
- Berries Seasonal summer berries
Autumn salad
- 1/4 cup Dried cranberries
- 1 tbsp Orange zest
- 1/4 cup Pecans
- 2 cups Apples Chopped
Dressing
- 2/3 cup olive oil
- 1/3 cup Maple Syrup, organic grade B or Local Raw Honey
- 1/4 tsp Himalayan pink salt or Halen Mon Anglesey sea salt
- 1/2 tsp Cinnamon
- Juice of half a lemon or Blood orange
- 1/2 tsp Ginger root Fresh
- 1/4 cup Reserved cooking liqueur from a beet Optional
Servings: people
Instructions
Salad
- Add arugula, ginger, and seasonal items to large bowl.
Dressing
- Add dressing items to blender, and blend until silky. Pour over salad and toss.
