Instructions
  1. Cut stem from bottom of collard leaf and use a pairing knife to trim the thickness of remaining stem, be careful not to cut into leaf.
  2. Fill a large pot with about 1 inch of water and bring to a boil, place leaf in the water one at a time for no longer than 2 min. Remove the leaf and place on a cookie sheet, set aside to let cool.
  3. On the middle of the leaf, put some hummus down first and assemble the vegetables on top. Drizzle with a little balsamic and fold leaf in the manner of rolling a burrito.
  4. Cut and serve.
  5. Optional: serve with a cooked egg.
