Better results are achieved by searing beef in a hot pan with olive oil, kosher salt and pepper, before placing into pressure cooker.
Place beef and vegetables into pressure cooker and seal according to manufacturer’s directions.
Place over high heat to begin cooking. Begin timing after steam begins. After 30-45 minutes, depending on weight of beef, slowly lower heat until very little steam is heard.
Manually release pressure, using valve, making sure not to have fingers or hand over steam.
